Grain will take center stage at the Kneading Conference in Skowhegan this week, bringing together farmers, bakers, millers, chefs and grain enthusiasts from across the country to share ideas and expertise.
The annual event, taking place this Wednesday through Friday, is hosted by the Maine Grains Alliance. It highlights the connection between growing grain, milling flour and producing handcrafted foods. The conference has been an annual event since 2007.
This week's event features workshops, lectures, panels and hands-on demonstrations centered on the science and craft of grain production, baking and brewing.

Keynote speaker for the conference will be David Bauer, a North Carolina miller, baker and seed collector. Bauer is the founder of Farm and Sparrow in Mars Hill, N.C., where he works with farmers to grow and mill traditional grain varieties for bakers and chefs.
His work has centered on preserving heritage grains and rebuilding relationships between growers and the people who use their harvests. Bauer's career has moved from wood-fired baking to small-scale milling and seed preservation, with a focus on keeping regional grain traditions alive.
