Three months after opening a crustacean-themed eatery at New York City's Grand Central Station, Luke's Lobster is headed out west for its next expansion.
The lobster retailer and restaurant chain, founded by Luke Holden and Ben Conniff in 2009, said it plans to open a lobster "shack" in Seattle this winter.
"We'll be serving our classic seafood rolls just steps away from Pike Place Market in all the hustle and bustle of Seattle's historic waterfront," the company said in social media posts last week. Luke's Lobster has more than 30,500 followers on Facebook and around 4,390 followers on LinkedIn.
The company did not immediately return a request for further information about the timing of the planned Seattle opening or the number of people it expects to employ at the new location.
Of the 19 current Luke's Lobster retail locations, two are in the western United States, in Las Vegas and San Francisco. The company also has an online store that sells lobster roll kits and other products and operates Saco-based Luke's Lobster Seafood Co. processing plant as well.
The Grand Central store that opened this summer was the company's first new brick-and-mortar venue since laying anchor at the Portland Pier in 2019.
As of late June, Luke's Lobster had employed 280 people nationwide, including 153 in Maine, a company spokeswoman told Mainebiz at the time.
Luke's Lobster was named the Renys Large Business Of the Year in the just-released 2022 Maine Family Business Awards, bestowed by the Institute for Family-Owned Business, a Portland-based nonprofit. Holden, a native of Cape Elizabeth, was honored on the Mainebiz Next List in 2021 for his contributions to Maine's economy.
