Chefs leave before Press Hotel opening

Two chefs have ended their partnership with a Portland hotel that is scheduled to open this month in the former Portland Press Herald building.

The Portland Press Herald reported that The Press Hotel was originally planning to have two James Beard award-winning chefs, Mark Gaier and Clark Fraiser, lead the hotel’s restaurant, which was going to be called M.C. Union, with the initials representing the chefs' first names.

But a spokeswoman for the hotel, Carla Tracy, told the newspaper on Wednesday that the two chefs will no longer be involved, saying it was an “amicable decision” among all parties. As a result, the restaurant will now be called Union Restaurant, and it will be led by Executive Chef Joshua Berry, who previously worked at The Balsams Grand Resort in New Hampshire.
