Friday Food Insider: Two Maine restaurants mix things up with new executive chefs

Two Maine restaurants from Waterville to Kennebunk are mixing things up with new executive chefs. 

At Front & Main in Waterville, Matthew Zita replaces Jesse Souza. Front & Main is the restaurant at Colby College’s downtown Lockwood Hotel. 

In Kennebunk, Mary Dumont joins White Barn Inn Restaurant and its counterpart, Little Barn, as part of the Auberge Resorts Collection.

Both appointments were announced this week. 

Chef Zita

Under Zita’s leadership, the culinary department will receive refreshed menus and new dining programs throughout the year. The first new menu is expected to launch this spring. 

From casual lunches to elegant dinners, the menus are expected to highlight Maine’s produce and fresh seafood. Guests can expect dishes with contemporary flair, including handmade pasta, "plant-forward" creations and elevated takes on New England classics. 

“With his culinary expertise and dedication, Chef Zita has quickly stepped into his role as the new leader of Front & Main’s kitchen, already bringing fresh ideas and energy to the team," said David Beaudoin, general manager of the Lockwood Hotel.

"His blend of artistry and passion aligns seamlessly with our mission to elevate the dining experience here in Waterville," Beaudoin added. "We are confident Chef Zita’s innovative approach will captivate our guests and the local community, continuing to make Front & Main a beloved dining destination.”

About Dumont

Under Dumont's leadership, the White Barn Inn Restaurant's menu will be updated to include several new dishes made with local ingredients, including squid ink bucatini and coral butter poached Maine lobster. 

She also plans to add different culinary experiences, including a Maine oyster-tasting, which will run from October to June, a truffle dinner series and a caviar series. 

Dumont has worked at dining establishments in California, Chicago and New England. 

She opened the Dunaway Restaurant in Portsmouth, N.H., where she was honored as Food & Wine “Best New Chef." In 2018, she was also named Eater Boston’s "Chef of the Year."
