New restaurant coming to Scarborough

A Colorado-based breakfast and lunch restaurant chain is expanding to the East Coast with a new location in Scarborough, slated to open in May.

The Egg & I has leased 4,200 square feet in the Dolphin Marketplace on Route 1 in Scarborough, according to a press release from CBRE|The Boulos Co. The restaurant is expected to open by mid-May. Based in Lone Tree, Colo., The Egg & I has 51 restaurants in 10 states, the majority of which are located in its home state and Texas. Since the chain was acquired from its founders by E&I Holdings Inc. in 2005, it’s grown from 17 locations to its current roster and $17 million in sales to $45 million today. Eight locations are corporate owned, while the rest are franchised. The Scarborough restaurant will also provide free private meeting space.
